Williams Refrigeration and Falcon Foodservice Equipment, the UK's leading suppliers of commercial refrigeration solutions and prime cooking equipment - part of Aga Foodservice Equipment - have once again ensured the very best equipment was used to feed over 24,000 athletes, coaches, local village staff and officials at the recent Olympic games on a 24-hour basis.

Working closely with PKL Foodservice, who have extensive experience in supplying portable kitchen solutions to world events, both Falcon and Williams provided a wide range of equipment from gastronorm cabinets, counters, blast chillers and mobile hot cabinets through to ranges, wok stations, chargrills, fryers, bratt pans for the Athletes Village as well as 50 other portable kitchens in 20 other venues across Athens for the TV broadcast crews.

The kitchen structure in Athens is nearly 4,000m2, with over 200m of servery space and, at its busiest will cook and serve up to 75,000 meals per day. Installed by a locally based PKL team who will maintain the facility until the last meal is cooked after the Paralympics on 30th September 2004.

Falcon provided a wide range of equipment including the award winning Dominator Fusion Six-Burner range that allowed dishes such as Tangerine Peel Beef and the aptly named, Greek Marinated Chicken to be prepared. Additionally, bratt pans and fryers were supplied to cope with the huge demand for fish and healthy steamed vegetable selections.

The range of fryers available from Falcon include the revolutionary Infinity Fryers which are turning the whole concept of deep frying upside down.

The Infinity Series of can reduce the operational costs of a fryer by over £2000 per annum due to the innovative new design. Infinity also addresses the topical issues of health and safety in the work place by having in-built filtration whereby contact with oil is removed. Producing more fries per hour than traditional fryers, the Infinity uses up to 68% less energy - again reducing running costs.

Williams provided almost 200 pieces of high performance equipment including gastronorm cabinets, counters, mobile hot cupboards, reach-in and modular blast chillers and chiller freezers to PKL. Providing safe storage for ingredients and pre-prepared food is essential in providing healthy meals to athletes and supporting staff from over 202 countries.

Meeting worldwide Food Safety Guidelines, Williams extensive range of reach-in and modular Blast Chillers are designed to rapidly chill from +90°C to +3°C in 90 minutes or less and, blast freeze from +90°C to -18°C in 240 minutes - eliminating the risk of growth of potentially harmful micro-organisms, whilst ensuring food quality, nutrition and taste. Blast chilling and freezing also offers money saving through reduced wastage, increased efficiencies and extended menu choice and, with the choice of capacities can be utilised effectively by any size of foodservice establishment.

Williams range of Mobile Heated cabinets are designed to safely store/transport hot food in first class condition between 78°C and 82°C with minimal dehydration. The Heated cabinets offer fast warm up and superb heat retention for excellent performance and efficiency with a safety cut-out switch and manual re-set. The built-in all-round bumper offers added protection of the cabinet and contents during transportation.
