Williams Gives Oi! Bagel Fresh Ideas
London-based Oi! Bagel, which operates six deli style stores, has turned to Williams Refrigeration - part of Aga Foodservice Equipment - to provide the latest refrigeration solutions for its outlets including their high performance user-friendly Dough Retarder Provers (DRPs).

Oi Bagel takes pride in being the first to develop the concept of each stores producing fresh bagels daily, on the premises, a trend being followed by other bagel outlets in the UK. As owner Steve King explains: "Every one of our Oi Bagel outlets bakes its bagels throughout the day, right in front of our customers' eyes, giving them fresh food on demand. Ensuring the quality of freshness and the continuous production is only possible if the equipment that we use in- store is durable and, crucially, fully operational at all times, key reasons why we opted for Williams' equipment. We are extremely pleased with their performance so far, particularly the Dough Retarder Provers (DRPs) - the last thing we can afford are disappointed customers."
Williams advanced DRPs have already been installed in Oi Bagel's newest outlets, most recently in the Metro Centre on Hammersmith Broadway. To meet Oi Bagels exact requirements, Williams developed software for the control panel to allow for automatic recovery for frozen and chilled products to a fully proven state ready to be baked, and increased the airflow and to compensate for the dramatic decrease in temperature associated with using frozen products. Undoubtedly, DRPs play an essential role in the modern baking process, providing a controlled environment for dough to develop in, ensuring that the quality of the final product - in this case bagels - during the proving process, is kept consistently high.

By choosing Williams to provide its refrigeration solutions including Jade gastronorm cabinets for the storage of the frozen bagel dough and Opal counters for storage and preparation of fillings, as well as DRPs, Oi! The user-friendly 'Combination' and 'Doughmaster' controls used on our Williams DRPs are designed for simple operation. These feature a programmable 7 day timer, automatic or manual temperature and humidity control and a hold facility which allows for dough to be kept at an optimum condition."
